Soft, creamy blue cheese but not as strong as a stilton, from the Devenick Diary, Aberdeenshire.
A hard unpasteurised cow's milk cheese. It has a smooth texture and strong taste. Notes of pineapple, toasted nuts and grass dominate the flavour profile. Made on Viceby Farm in Lincolnshire.
A smear ripened Italian cheese named after the caves of Val Taleggio. It is a semi soft washed rind cheese. The cheese is washed in sea water once a week. Made from pasteurised cow's milk, the cheese has a strong smell but its taste is relatively mild with an unusual fruity tang.
A semi hard cows milk cheese made in Cornwall from the milk of Friesian cows. Before being left to mature the cheese is wrapped in nettle leaves to form an edible, though mouldy rind.
The Devenick Dairy, Banchory-Devenick. A hard pasteurised cow's milk cheddar. Smooth and creamy with a slight tang.
A French cheese, orignally manufactured in the area around the commune of Pont-Levesque. Made from cow's milk it is a pale yellow colour with its rind has a white orange colour. A soft and very rich cheese with a creamy and full bodied flavour.
SAINT - MAURE DE TOURAINE
A French cheese produced in the province of Touraine. Made from pasteurised goat's milk. This buttery and smooth cheese with a little acidic flavour emerges drier, denser and with a fine grey blue edible rind.
Produced from the La Mancha Plateau in South-Central Spain. Made from unpasteurised sheep's milk the cheese is crumbly in texture while the interior of the cheese has a butterscotch colour with a sweet lingering taste.
A French blue cheese, named for its place of origin in the Auvergne region of south-central France. Strong smelling, taste is spicy with flavours of grasses and wild flowers.
Made by Connage Highland Dairy, Ardersier, Inverness. Mild with hidden depths of bitterness. Buttery taste and unique grassy flavour.
From Dunlop Dairy based near Stewarton, Ayrshire. Suitable for vegetarians, made from pasteurised milk. It is a white, soft, fresh cheese with a creamy texture. (Paddy's Milestone is the local name for Ailsa Craig, a volcanic rock which sits out in the Firth of Clyde)
The Devenick Dairy, Banchory-Devenick. Half goat, half cow's mike pasteurised soft cheese. It has a light and creamy texture with a mild goat's cheese flavour.
